Apple and rhubarb crumble
Roughly chop apples and rhubarb, toss through sugar/honey/sweetener (chopped dates or dried apricots would be nice), a pinch of cloves and a teaspoon of cinnamon. Cover with foil and cook in a moderate oven until soft. Meanwhile make your crumble topping. I've used a mix of flour, sugar and oats, butter and vanilla powder this time, but margarine, almond meal, chopped nuts, gf flour and coconut can also be used. Rub these together with your fingers to make a crumbly mixture. Sprinkle this over the top of the appley rhubarb mixturebthen cook until golden. Delicious with cream, ice cream, custard or yoghurt. Leftovers make a wonderful breakfast! .
